Matcha coconut pudding
I am a matcha lover and anything with matcha flavor I would want to try. This jiggly matcha pudding has made the summer dessert menus more delicious. My love for pudding starts with coconut pudding with some shredded coconut flake outside that pudding to add some crunchy texture around the silky pudding. This recipe of matcha coconut has combined my love for matcha and coconut all in one bite, and the matcha helps to neutralize some of the creamy and sweetness of coconut.
This recipe is super simple to make, with some gelatin powder, coconut milk, and your favorite brand of match powder, then mix everything together on the stove. Then chill in the fridge for a few hours.
Boom! Here comes your silky jiggly matcha coconut pudding.

Matcha Coconut Pudding
Ingredients
- 1 ½ Tbsp matcha powder
- 5 g gelatin powder
- 2 Tbsp hot water
- 1 ¼ cup coconut milk
- ¼ cup sugar
- 1 cup shredded coconut for decoration
Instructions
- Mix gelatin powder in hot water in a medium bowl, then over hot steam to make sure dissolve
- Add milk to a saucepan, bring to almost boil, when small bubbles on the side of the saucepan then turn off the heat.
- Add sugar into the sauce pan until sugar dissolves, mix well.
- Take 3Tbsp of the milk mixture, add into matcha powder, and whisk well until no lump. When it's smooth and silk
- Pour matcha mixture back into milk mixture, whisk all together
- Add gelatin mixture into matcha mixture, then whisk well.
- Pour mixture into a glass container, and chill in the fridge for 2 hours.
- Cut it into 2x2 inch squares and sprinkle the coconut flakes on top of the pudding.
- Enjoy!
