Preheat the oven to 375F, line 12 cup muffin tin with muffin liner, or grease the tin with some butter.
Zest and juice 1 lemon, add the zest to the sugar and mix well
Mix the wet ingredients; combine eggs, coconut milk, oil, lemon juice, vanilla extract
Mix all the dry ingredients: combine flour, baking powder, baking soda, salt, and coconut flakes. Then add in the sugar and lemon zest mix. Mix everything well
Mix the wet ingredients with the dry ingredients.
Scoop the mixture into a muffin tin, and sprinkle extra coconut flakes on top of each muffin mixture
Bake in the oven for 20-25 minutes
Allow the muffin to cool down before taking it out of the muffin pan, and Enjoy!
