Lemon coconut muffin

Ingredients
  

  • 1 lemon juice and zest
  • 2 large eggs
  • 2 ½ cup all-purpose flour
  • 1 ½ tsp baking powder
  • ½ tsp baking soda
  • 2/3 cup granulated sugar
  • 1 pinch of salt
  • 1 tsp vanilla extract
  • ¼ cup vegetable oil
  • 1 cup coconut milk
  • ½ cup coconut flakes extra for toppings

Instructions
 

  • Preheat the oven to 375F, line 12 cup muffin tin with muffin liner, or grease the tin with some butter.
  • Zest and juice 1 lemon, add the zest to the sugar and mix well
  • Mix the wet ingredients; combine eggs, coconut milk, oil, lemon juice, vanilla extract
  • Mix all the dry ingredients: combine flour, baking powder, baking soda, salt, and coconut flakes. Then add in the sugar and lemon zest mix. Mix everything well
  • Mix the wet ingredients with the dry ingredients.
  • Scoop the mixture into a muffin tin, and sprinkle extra coconut flakes on top of each muffin mixture
  • Bake in the oven for 20-25 minutes

  • Allow the muffin to cool down before taking it out of the muffin pan, and Enjoy!
